Q: What are some flavor benefits to roasting beets and what types of dishes can I use them in?
A: Roasting beets, as with any other fruit or vegetable not only concentrates the inherent flavor but also coaxes natural sugars out of them. Boiling, steaming, and even frying will never yield the kind of flavor that roasting can. I love roasting beets in orange juice, honey, miso, and olive oil to highlight their beautiful floral qualities, and they pair excellently with fresh herbs such as mint, chervil, and cilantro.
